Strawberry shortcake can be made using biscuits, scones, pound cake, or sponge cake. This version uses scones.
Serves 3.
Ingredients:
Rinse the strawberries. Slice ¾ of them and put them in a bowl. Chop the remaining strawberries and then mash them. It's easiest to do this with your fingers. Add the mashed berries to the slices ones. Add the sugar and stir. Let stand for an hour or two, stirring occasionally.
Bake the scones. Allow them to cool for about 5 minutes. While they are cooling, whip the cream with the vanilla until stiff.
Cut the scones in half and lay them out, cut side up, on plates. Pour the strawberries on top. Add the whipped cream. Sprinkle the blueberries on top.
