A light breakfast for three people.
Based on a recipe on a box of McCann's oatmeal.
Ingredients:
Combine the oats, yogurt, and buttermilk in a large bowl. Stir in the flours, baking powder or baking soda, and salt. Stir in the beaten eggs. Stir in the chopped walnuts. The batter should be thick. Adjust as necessary.
Heat a large pan over medium heat. Spoon about ¼ c of batter into the pan for each pancake. Cook until browned on the bottom and bubbly on top - about 3 minutes. Flip and cook until the other side is browned - about 2 minutes more.
Serve with pears and cinnamon sugar or maple syrup.
