Eggs on Sopes

Peter's recipe.
Serves three.

Chop the onion and fry in oil until soft but not brown in a large frying pan. Beat the eggs, milk, salt, and pepper and pour over the onions. Stir occasionally as the eggs set.

Meanwhile, fry the sopes in oil until slighly browned in another large frying pan. Slice the avocado.

Fill the sopes with avocado slices. Put the scrambled eggs on top. Spoon some salsa on top and follow up with a dollop of sour cream.
